As the May Real Simple magazine puts it, less is more in the kitchen. Go for simpler packages: fewer tags, staples, fasteners, foil envelopes and plasticky wrappings and coatings. More is more: Say yes to flour, sugar, legumes, rice and spices in bulk and say no to individual serving sizes. You can do the divvying up at home. Also, by becoming a do-it-yourself pioneer — grate your own cheese, slice your own mushrooms, peel your own garlic — you've just saved the planet from half a trash can of packaging.
