Of course, a bottle of organic or biodynamic wine can be green even when it's red. The natural approach has produced some fine wine, says Jason "Cass" Castle, beverage manager and sommelier for Merriman's Kapalua.

"Some of the best wines in the world are being produced that way," Castle says.

A biodynamically produced wine means it was made on a vineyard that views itself as a holistic living system, from using farm animals to fertilize the soil to planting with lunar cycles. An organically produced wine means it was made from grapes grown without the use of chemical fertilizer and pesticides.

"Anyone willing to invest the extra effort to become certified in those categories, really cares about the product they put out and that transforms into flavor," he says.

For the best selection — and educated advice — seek out a wine shop and plan on spending at least $27, Castle says.
